<p> Paxton is a 5 red star family estate headed up by David Paxton, one of Australia’s best-known viticulturists and consultants, with the wines being made by David’s son Michael. The estate consists of five vineyards, all of them biodynamic. Their Cabernet is rich and textured, with an impressive 94pts from Halliday: "Fermented in open and closed fermenters, and held on skins (plunged or pumped over) for 14 days, matured for 9 months in new and used French puncheons. It shows the elevated spices and supple texture engendered by the vintage, and is a lovely drink...94pts" </i> (Halliday).
