Jean-Marc Sauboua is the talented, Haut Brion trained winemaker at Le Chai au Quai. Not only is he very good at his job, but he has an enviable network of contacts, which gives him access to terrific parcels of grapes. Bernard Lartigue has a top property in the Haut Médoc's Listrac and was mentor to JMS in the early years. Such is their friendship that, in 2011 and again in 2014, JMS was allowed to pick out parcels of Merlot and Cabernet from Lartigue's vines to make this luscious Bordeaux. Skill and sheer hard work is a given at this estate and the quality of the grapes is apparent in the richness of this Médoc. A few months in oak have lent a subtle vanilla wrap to the cassis notes. Let the wine breathe and serve with roast lamb or beef.
