Home to the first Great Southern plantings in WA, Forest Hill are fastidious about quality. If a vineyard site isn’t up to scratch, the block is removed. If the vintage isn’t good enough, they simply don’t release a wine. The result? Incredible flavour and style! <i> "From Blocks 5 and 6 on the dry grown Highfields Vineyard, mainly Gin Gin clone, but with some Dijon clones 76, 95 and 96, crushed and pressed straight to 50/50% French barriques and stainless steel, some wild yeast fermentation at cool temperatures, partial mlf left 7.08g/l acidity.
