<p> Paxton is a 5 red star family estate headed up by David Paxton, one of Australia’s best-known viticulturists and consultants, with the wines being made by David’s son Michael. The estate consists of five vineyards, all of them biodynamic. The ‘AAA’ refers to David’s days in the wool trade, where this symbol was stamped on the best grades of wool. The fruit is 60% Shiraz and 40% Grenache from special pockets amongst the vineyards, including the prime ‘Gateway’ and ‘Jones Block’ vineyards...definitely AAA material! <i> "A 60/40% blend, separate lots fermented in open or closed vessels, matured in used barriques for 12 months prior to blending. It's medium-bodied at best, but there's no shortage of flavour, and sufficient extract to provide texture (and length).
