Sourced entirely from estate grown fruit. Harvested and fermented in multiple batches to gain a broader spectrum of fruit flavours from spicy through to ripe plums. Retains fresh acidity by avoiding over-ripeness. Co-fermented with Viognier for fragrant lift. Very light use of oak. Will develop earthy complexity with time.
