Malbec too has been tamed. </p> <p> Malbec's first heyday was in the Middle Ages when its tough tannins were ideal for keeping wine palatable during long sea voyages. Argentina's winemakers recently showed how these tannins could be tamed, and now Malbec producers in South West France are crafting their reds so they too show their rich fruit and only a minimum of tannins. </p> <p> Enjoy this wickedly good, beastly red with French classics such as cassoulet, duck or steak. </p>
