<p> Muscadet is a French classic and with a new generation of winemakers taking over family domaines there's a new impetus for quality, too. Domaine des Herbauges was founded in 1864 and came into the hands of third generation owner Luc Choblet in 1980, who decided environmentally friendly methods were the way to obtain even more flavour from his grapes and their terroir. Jérôme took over from his father recently and has taken quality even higher. </p> <p> He says: "Winemaking is my passion, as is cultivating the very best vines. Each step of the process determines the final expression of the flavours and aromas of my wines, from the most intense to the most delicate." </p> <p> Mineral aromas with lemon and Granny Smith apple tones, tingly fresh with a hint of spritz and lots of green apple and floral characters. A fine Muscadet aged here for a year on its lees, this is a great match for seafood, particularly fresh oysters. </p>
