<p> Thanks to cooling breezes from the nearby River Mayor, the grapes ripen slowly - resulting in intense yet elegant flavours. Javier fermented them at a carefully controlled temperature to capture all their sunny character. </p> <p> He matured the wine for a year in French and American oak before bottling, allowing it to rest for a further two years in his cellar prior to release. With its gentle red fruit and toasty oak, this red is delicious on its own or with herby chicken or pork casseroles. </p>
